WHY WHY WHY Haven’t I thought of this before!?! I was perusing the aisles of the grocery store this morning picking up a few things for later posts and found myself wandering down the Valentine’s Day aisle. I picked up a few boxes of my husband’s favorite candy and set it right back down. I’m not paying extra because it’s a heart shaped chocolate peanut butter stuffed candy. Then a light bulb went off and I pushed my little cart right on over to the baking aisle and grabbed two 4 oz. Bars and one 12 oz. bag of Ghirardelli Semi-Sweet Chocolate. Rushed home and my version of Home Made Ghirardelli Chocolate Peanut Butter Cups were born. I know I’m not an original in this, I’m sure there were hundreds even millions who beat me the punch on this one but I’m still really excited. A perfect Valentine’s Day Treat!
Makes 24 Mini muffin size.
Ingredients:
4oz. Bar Ghirardelli Premium Baking Bar
12 oz. Bag Ghirardelli Premium Baking Chips
½ Cup Favorite Creamy Peanut Butter
¼ Cup Powdered Sugar
2 Tbsp. Softened Butter
- Line muffin pan with liners-I found double lining them keeps the appearance of the cup much nicer
- In a double boiler or microwave or Large pot and glass bowl melt chocolate. BECAREFUL not to burn. ( I heat water in large pot and use my pasta insert and a glass bowl to get the bowl to the perfect temp. If you’re also using this method NOT BOILING WATER is key, and don’t let your bowl touch the water directly and make sure you are stirring it every so often.)
- In a medium sized bowl mix with spoon Peanut Butter, Powdered Sugar and softened butter. Mix till creamy. Set aside
- Spoon chocolate into the bottom of each lined cup. Just enough that it covers the bottom and comes up the sides a bit.
- Next take a small blob or plop of peanut butter and place it in the center. I got messy with this one- I spooned it out and then pushed about a tip of my finger and a bit more into the chocolate lined cup. It worked great. Refrain from licking until ALL cups are filled! Then wash your hands of course.
- Once all cups are peanut butter blobbed use remaining chocolate to cover the tops. I used the bottom of the spoon to smooth it over once the pb plop was covered with chocolate.
- Cover and set in refrigerator. It should only take around 30 minutes maybe even less, for all the PB cups to set.
- Once the cups have hardened to loosen them u may need to tap the bottom of the tray on the counter.
- Package them up in a fancy box… Or just dive in and eat them!
- ENJOY!!!!

I JUST put a tweet out a little bit ago asking for ideas for V-day because I was having MarthaStewart-Block. These are PERFECT. I make candy a lot it is quietly my favorite thing to do and am going to make these for my co-workers, kids teachers etc. except instead of peanut butter (which i will do for myself as a peanut butter addict) for them I am going to use salted caramel that I have left over from something else. I also may try with coconut. So many varieties! You are the BEST, thank you!!!!!

These sound (and look) fabulous! Since it’s me and not my husband who loves peanut butter and chocolate, I think this recipe could prove dangerous. If anyone has a recipe for Turtles lurking, though, throw it on out there! He loves those, and it would save me from eating a whole batch of something myself!
Question: I love, love, love ANY kind of chocolate. The Mr. said it’s too dark. Can it be made w/o dark chocolate or is this just how it comes?

Yum I must try make these for my man sometime. Love peanut butter, love choocolate so why not? Peanut Butter Cups aren’t something you can really buy here in NZ. We had an exchange student from the USA one time though and she had brought some with her. I had seen them on tv and stuff so it was cool to be able to have one in real life. So its great to have a recipe!
