Sausage & Kale Crockpot Soup with a Lemon Basil Parmesan Snow Flake

I had a package of lean turkey sausage that had to be cooked; I had some kale in my fridge that needed to be eaten.  Sounds like Sausage and Kale crockpot soup to me! I worked last night so this recipe was perfect. When you come home at 7:30 am (in a blizzard) after a 12.5 hour shift in the ER on a night of a blizzard, you really aren’t all that pumped to get cooking in the kitchen. But this is one of those prep, set, forget soups and it worked out perfectly! And guess what else… This is another one of those indulge all you want because it’s practically fat free & it’s loaded with nutrients & vitamins!

Makes one REALLY full large crockpot

Ingredients:

1 42 oz. Box Low Sodium Fat Free Chicken Broth + 1 more cup

2 Cups Carrots- Chopped

2 Cups Cooked Beans – I used pinto because that’s what I had in my fridge!

1 Green Bell Pepper- Diced

1 Shallot- Diced

7 Red Skin Potatoes- halved and then quartered

2 Cups Chopped Kale

5 Large Cloves Garlic – Minced about ¼ cup

4 Italian Sausages- I left the casings on and just made them into bite sized pieces and dumped them in.

1 bundle of Herbs- Rosemary, Thyme and Marjoram. Wrapped in cheese cloth. A few sprigs of each

Lemon Basil Parmesan Snow Flake:

Makes 8 Snowflake Chips

Ingredients:

1 tsp. freshly grated lemon zest

8 Tbsp. freshly grated or shredded Parmesan

1 tsp. Basil- Finely chopped

Dash of Salt and Pepper to taste.

Soup:

  • Chop and Dice all veggies, potatoes and turkey and add to crockpot
  • Pour in broth.
  • Add bundle of herbs and stir gently to mix all ingredients well. Trying to not break apart sausage pieces
  • Set crockpot on Low Cook and Cover.  Let cook until potatoes are tender checking and stirring occasionally. About 8 hours
  • Remove herb bundle before serving

Lemon Basil Parmesan Snow Flake:

  • Pre-Heat oven to 350°F
  • Line a baking sheet with parchment paper
  • Combine all ingredients into small bowl
  • Using combined parmesan mixture, make 8 small piles on the parchment paper lined baking sheet.
  • Bake in the oven about 5 minutes or until all piles are golden brown.
  • Remove from oven let cool on baking sheet
  • Use as garnish in soup

ENJOY!!!!

Pre-Heat oven to 350°F. Line a baking sheet with parchment paper. Combine all ingredients into small bowl. Using combined parmesan mixture, make 8 small piles on the parchment paper lined baking sheet

Bake in the oven about 5 minutes or until all piles are golden brown

Remove from oven let cool on baking sheet

    Especially love the snowflake. I’ve done cheddar crisps but hadn’t considered adding herbs, etc. Nice twist!
